Time Zones and Setting Sun

It seems like when the sun is setting in the west and you are driving west, crossing into the Central Time Zone, something should change. Instead of the sun just continuing to sink in the sky and setting an hour earlier that you would have expected, shouldn't the sun rise back up into the sky a bit so it can set at the same time as in the Eastern Time Zone.

Maybe this just shows the arbitrary nature of not just time zones, but time itself.
